The healthy switch: Homemade chicken nuggets


Chicken nuggets and chips seem to be a staple on many kids menus at restaurants, yet they are lacking in nutrition. Processed chicken dipped in crumbs and fried provides a meal with excess fat that lacks adequate protein, fibre, vitamins and minerals. Practical Parenting shows you how to switch from bought chicken nuggets to homemade ones with this easy recipe. By making your own you can improve the nutritional quality with 100 per cent chicken and extra ingredients such as vegetables to add taste and function for growing bodies. These nuggets are high in fibre, low in saturated fat and full of calcium and B-group vitamins.


Ingredients 
300g chicken breast fillet
1 carrot, peeled
1 zucchini
½ cup corn kernels
1½ cups tasty cheese
1½ tablespoons soy sauce
1 tablespoon cornflour

Method
1. Preheat oven to 180°C.
2. Process chicken in a food processor until smooth. Put in a bowl. Process carrot, zucchini and corn. Add to bowl.
3. Add the cheese, soy sauce and cornflour, and mix together well.
4. Roll tablespoons of mixture into balls and place on a lined tray. Bake for 30–40 minutes, until golden.
Tip: These nuggets freeze well.

Salmon fishcakes


Get your kids eating fish by serving up these salmon fishcakes with this easy recipe by Annabel Karmel. This quick and healthy recipe will be a hit for dinner or lunch.

 
Ingredients
Fishcakes:
250g cooked potato (approx 250g potatoes peeled and cut into chunks)
2 tablespoon mayonnaise
1½ tablespoon sweet chilli sauce
1 teaspoon lemon juice
20g sliced spring onion
35g cheddar cheese, grated
2 tablespoons tomato sauce
250g raw salmon cut into small cubes
60g fresh breadcrumbs or 15 g dried breadcrumbs
Salt and pepper
100g dried breadcrumbs for coating
Sunflower oil for frying the fish cakes 
Dip:
3 tablespoons mayonnaise
2 tablespoons sweet chilli sauce
 
Method
1. Put the chunks of potato into a pan. Cover with boiling water and add a little salt. Cook for 10 to 12 minutes or until tender. Drain and leave to cool down.
2. Mix together with the mayonnaise, sweet chilli sauce, spring onion, grated cheddar and tomato sauce and roughly mash using a potato masher. Mix in the salmon cubes and breadcrumbs and season to taste.
3. Using your hands, form the mixture into about 8 fish cakes. Coat in the dried breadcrumbs. Heat some oil in a large frying pan and sauté for about 5 minutes, turning halfway through until golden on both sides.
4. To make the dip simply mix together the mayonnaise and sweet chilli sauce.
 
Notes 
Suitable for freezing when uncooked.

Lunch Box Recipes: Macaroni & vegetable frittatas


Pack the kids off to school with these pasta-based frittatas from Tatse. You might not mind them for work either!


Preparation Time 15 minutes
Cooking Time 30 minutes
Makes 6

Ingredients
120g (3/4 cup) macaroni pasta
Olive oil, to grease
2 x 125g cans corn kernels, rinsed, drained
1 small red capsicum, halved, deseeded, finely chopped
1 medium carrot, peeled, coarsely grated
80g (1 cup) coarsely grated cheddar
7 eggs, lightly whisked
125ml (1/2 cup) milk

Method
1. Cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente. Drain. Refresh under cold running water. Drain well. 
2. Preheat oven to 180°C. Brush six 185ml (3/4-cup) capacity non-stick Texas muffin pans with oil to lightly grease. Combine the macaroni, corn, capsicum, carrot and cheddar in a large bowl. Spoon evenly among prepared pans. 
3. Whisk together the egg and milk in a jug and pour over the macaroni mixture. Bake in preheated oven for 20-23 minutes or until just set. Remove from oven. Set aside in the pan for 5 minutes before carefully turning onto a wire rack to cool.

Notes
These frittatas will keep for up to 3 days. Store in an airtight container in the fridge and bring to room temperature before serving. Pack a frittata with some mixed salad leaves, and a container of washed hulled strawberries and grapes. Chill some apple or orange juice and pack separately.
