Passionfruit Slice



There's no faster way to win hearts than with a delicious homemade slice. Its the perfect lunchbox treat for those hungry kids.

Preparation Time 20 minutes
Cooking Time 30 minutes
Makes 18

Ingredients
Melted butter, to grease
150g butter, at room temperature
1/3 cup caster sugar
1 tsp vanilla essence
1 egg
1 cup plain flour
1/4 cup self-raising flour
2 tbsp milk
395g can sweetened condensed milk
1/2 cup fresh lemon juice
1/4 cup passionfruit pulp

Method

1. Preheat oven to 180C. Brush a 16 x 26cm (base measurement) slab pan with melted butter to grease. Line the base and two long sides with non-stick baking paper, allowing the sides to overhang.
2. Using an electric beater, beat the butter, sugar and vanilla in a bowl until pale and creamy. Beat in the egg. Fold in the combined flours and milk until smooth.
3. Spoon the mixture into the prepared pan. Use the back of a metal spoon to spread and press evenly over the base of the pan. Bake for 15 minutes or until a skewer inserted into the centre comes out clean.
4. Meanwhile, use a balloon whisk to whisk the condensed milk, lemon juice and passionfruit in a large jug until smooth and well combined. Pour the condensed milk mixture over the base.
5. Bake for 15 minutes or until firm to the touch. Set aside to cool completely. Cut into slices to serve.

Notes
This slice is best served at room temperature – for a soft texture, take it out of the fridge one or two hours before serving. If it's too cool, the texture will seem dry and hard.

Snack Box Muffins



Cook up a batch of these cheese and pumpkin muffins for hungry after-school tummies.
 
Preparation Time 15 minutes
Cooking Time 30 minutes
Makes 6
 
Ingredients
Olive oil spray
225g (1 1/2 cups) self-raising flour
1/2 tsp baking powder
175g Kent pumpkin, peeled, seeded, coarsely grated
125g can corn kernels, drained
50g prosciutto or shaved ham, coarsely chopped
25g (1/4 cup) coarsely grated cheddar
2 shallots, trimmed, finely chopped
2 eggs
185ml (3/4 cup) milk
90g (1/3 cup) thick natural yoghurt
2 tbs pumpkin kernels (pepitas)   

Method
1. Preheat oven to 180°C. Spray six 185ml (3/4-cup) muffin pans with oil.
2. Combine the flour and baking powder in a large bowl. Stir in the pumpkin, corn, prosciutto or ham, cheddar and shallot. Make a well in the centre.
3. Whisk the eggs, milk and yoghurt in a jug. Pour into the well in the flour mixture and stir until just combined. Spoon among the prepared pans. Sprinkle with pumpkin kernels.
4. Bake for 25-30 minutes or until a skewer inserted into the centres comes out clean. Set aside in pans for 5 minutes to cool before transferring to a wire rack to cool completely.

Crumbed Cutlets With Sweet Potato Chips & Cheesy Dip


Not sure what to cook the kids for dinner? This recipe has just the right amount of crunch and the lamb cutlets are a perfect fit for small hands.


Preparation Time 20 minutes
Cooking Time 50 minutes

Ingredients (serves 4)
6 small sweet potatoes (kumara), unpeeled, scrubbed, cut into wedges
80ml (1/3 cup) olive oil
75g (1/2 cup) plain flour
2 eggs
2 tsp water
50g (1 cup) panko breadcrumbs
1 tbs dried Italian herbs
8 lamb cutlets, French trimmed
220g tub spreadable cream cheese
60ml (1/4 cup) sweet chilli sauce
2 tbs tomato sauce

Method
1. Preheat oven to 200°C. Line 2 large baking trays with non-stick baking paper. Place the sweet potato, skin-side down, on 1 tray. drizzle over 2 tablespoons of oil. Season with salt and pepper. Roast for 40 minutes or until golden. Turn oven off. Cover the sweet potato with foil and leave in oven to keep warm.
2. Meanwhile, place flour in a shallow bowl. season with salt and pepper. Whisk egg and water in a separate shallow bowl. Combine breadcrumbs and herbs in another bowl. Coat 1 lamb cutlet in the flour and shake off excess. Dip in egg, then in the breadcrumb mixture, pressing firmly to coat. place on remaining tray. Repeat with remaining lamb, flour, egg and breadcrumb mixture. Cover and place in the fridge for 30 minutes to chill.
3. Combine the cream cheese, sweet chilli sauce and tomato sauce in a bowl.
4. Heat remaining oil in a large non-stick frying pan over medium-high heat. Cook half the lamb for 4 minutes each side or until golden. Transfer to a plate lined with paper towel. Repeat with the remaining lamb. Serve with the chips and dip.

Notes 
Make it ahead: Crumb the cutlets, then freeze in an airtight container for up to 2 months.
