Nutella Crumble Slice



This delicious Nutella crumble slice can be cut into squares or bars and is a great treat for the kids!

Ingredients
3 cups plain flour
3 cups rolled oats
2 1/4 cups brown sugar
1 1/2 tsp baking powder
1/2 tsp salt
375g (1 1/2 cups) butter, melted
600g Nutella or hazelnut spread
 
Method
1. Preheat oven to 180°C. Line a 23 x 33cm baking pan with baking paper and set aside. 
2. In a bowl, place the flour, baking powder, salt, oats and brown sugar. Stir together. 
3. Pour in the melted butter and stir to combine. 
4. Set aside 2 cups of mixture and press the remainder into the bottom of the pan. 
5. Heat Nutella in the microwave for 1 minute and pour over the base. 
6. Sprinkle the reserved oat mixture over the Nutella. 
7. Bake for 25 minutes or until golden. Leave to cool and slice into squares or bars.

Hints for Stress-Free Slumber Parties



As children grow older there comes a time when slumber parties and sleepovers are a vital part of their social life, so Homelife has given us the low-down on stress-free sleepovers. This school holidays be prepared with fun activities, plenty of food and a cosy environment for your young guests to enjoy. 

Let your children create a theme for the night that carries through to the games, decorations and even the snacks. A pink party for a girls sleepover, or a camp out under the stars for the boys. Provide enough food to avoid growling bellies: a good mix of healthy snacks and a few sweet treats will keep the crowd from getting hyperactive. Plan extra activities and provide board games and videos so that the children can entertain themselves quietly if some of the guests fall asleep earlier than others. 


Make sure your young guests know you are always available if there are any problems, but the most vital rule is to let them have their space just to chat, giggle and have fun. Transform the living room into an extension of their bedroom for the night. Make it cosy, and provide plenty of cushions and blankets. 


Children love having their own little hideaway, and building temporary constructions and tents is a must for growing kids. This tent was made with army blankets draped over a washing line and secured with pegs. If you are comfortable with the idea, let them sleep outside in their own creations, but ensure that a mosquito net is part of their building plans. 


For an overnight adventure in the great outdoors, it may be a good idea to invest in a quality sleeping bag that will take your child through many a slumber party, along with a sturdy backpack to store their gear. The backyard is the perfect setting for some creative activities and games. Why not organise a night-time scavenger hunt: simply hide clues and prizes around the garden, provide everyone with a torch and let the fun begin.

It's Pizza Time!


We all know kids love pizza! Not only eating them but helping mum or dad make them as well. Practical Parenting offer parents some great recipes for kids, to make dinner time a little bit more exciting! Here are some great pizza recipes that we are sure your little ones will love to help and eat!



Ingredients 
1 wheat tortilla wrap
2½ tablespoons tomato sauce (home-made or shop bought)
30g cheddar or mozzarella, grated
2-3 black stoned olives, cut into rings
1 cherry tomato, cut into rings
2 cubes drained canned pineapple, cut into dice
1 tablespoon diced red capsicum
1 tablespoon drained canned corn
1 green onion, sliced
2 mushrooms, sliced
3-4 very thin slices zucchini, brushed with a little oil
1 tablespoon freshly grated parmesan
2 sundried tomatoes, finely sliced
 
Method
1. Preheat the oven to 200°C.
2. Put the tortilla wrap on a baking sheet and spread over the tomato sauce. Sprinkle over the cheese and add any desired toppings – keep it to two or else it will turn into a mess.
3. Bake for 8-9 minutes, until the cheese has melted and the base is crisp.
4. Cut into triangles and allow to cool slightly before serving. 



Ingredients 
9cm focaccia square, split in half
50g cheddar or mozzarella, grated
2-3 toppings of your choice (see below)
 
Suggested toppings
Drained sweetcorn
Diced chorizo, salami or pepperoni
Mushrooms, sliced and cooked in olive oil
Zucchini, thinly sliced
Shaved ham, cut into strips
Pineapple rings, diced
Red or yellow capsicum, diced
Spring onion, thinly sliced
Tomato, sliced or cut into wedges
Olives, pitted and thinly sliced
Cooked chicken, diced
Bacon, cooked and crumbled
 
Sauce 
1 teaspoon olive oil
½ red onion, chopped
1½ tablespoons tomato paste
1 tablespoon water
 
Method
1. Preheat the grill to high. To make the sauce, heat the oil in a small frying pan and cook the onion for 5 minutes, until soft. Remove from the heat and stir in the tomato paste and water.
2. Put the focaccia halves on an oven tray lined with baking paper, cut-side up. Spread over the sauce and then sprinkle with your choice of toppings. Scatter cheese over the top.
3. Grill the pizzas for 4 minutes, until the cheese is bubbling and golden. Allow to cool slightly before serving.



Ingredients 
1 small red onion
1 tablespoon olive oil
1 small clove garlic, crushed
1 tablespoon tomato puree
2 teaspoons tomato sauce
1 tablespoon hot water
2 small round pita breads
50g cheddar cheese, grated
 
Method
1. To make the tomato base, chop and fry the onion in the oil for 5 minutes. Add the garlic and cook for 1 minute. Stir in the tomato puree and sauce, and water.
2. Split the pitas in half and toast lightly until crisp. Divide the tomato base between the pitas and spread out right to the edges.
3. Scatter cheese over the tomato base. Use topping ingredients to make patterns or faces. Grill until cheese melts.

Yakitori Chicken Kebabs With Noodles



Introduce your kids to the tastes of Japanese food with this delicious chicken skewers and noodle recipe.  

Ingredients 
3 tablespoons mirin
3 tablespoons honey
3 tablespoons soy sauce
2 teaspoons rice wine vinegar
1 teaspoon grated fresh ginger
1 clove garlic, crushed
2 tablespoons oil
4 chicken thighs, boned and cut into large chunks
6 bamboo skewers, soaked in water for 20 minutes
125g medium noodles
1 large zuchinni, sliced into batons
1 large carrot, sliced into batons
2 spring onions, thinly sliced
1 red onion, sliced
75g chestnut mushrooms, sliced
75 ml chicken stock
4 teaspoons soy sauce
4 teaspoons sweet chilli sauce
.
Method
1. Combine the mirin, honey, soy sauce, vinegar, ginger and garlic in a small pan. Bring to the boil and cook, stirring, until reduced by a third. Cool completely.
2. Mix the cooled marinade with the chicken and place in the fridge for 30 minutes.
3. Preheat the oven to 220°C. Thread chicken onto skewers. Heat 2 tablespoons of oil in a frying pan. Brown the skewers for 1-2 minutes on both sides until golden, then place on a baking tray. Bake in the oven for 12-15 minutes until cooked through.
4. Meanwhile, cook noodles in boiling water according to packet instructions and drain.
5. Heat remaining oil in a frying pan or wok. Fry all the vegies for 3-4 minutes, then add noodles, stock, soy and chilli sauce, and heat through. Serve with the kebabs.

Rainbow cupcakes


  

Get your kids in the kitchen to party and cook up a storm!

Ingredients
(makes12)
125g butter, softened
1 teaspoon vanilla extract
3/4 cup caster sugar
2 eggs, lightly beaten
1 1/2 cups self-raising flour, sifted
1/2 cup milk
Pink, green and yellow food colouring
Smarties, jelly beans, snakes, jubes and
100s and 1000s, to decorate

Buttercream icing
125g butter, softened
1 1/2 cups icing sugar mixture
1 tablespoon milk
 
Method
1. Preheat oven to 180°C/160°C fan-forced. Line a 12-hole, 1/3 cup-capacity muffin pan with paper cases.
2. Using an electric mixer, beat butter, vanilla and sugar until light and fluffy. Add eggs, 1 at a time, beating after each addition. Stir in flour and milk to combine.
3. Spoon 1/4 cup mixture into each paper case. Bake for 25 minutes or until a skewer inserted in the centre of 1 cake comes out clean. Stand cakes in pan for 2 minutes. Transfer to a wire rack to cool.
4. Make icing: Using an electric mixer, beat butter in a bowl until pale. Gradually add icing sugar mixture and milk, beating to combine. Divide icing between 3 bowls. Tint each portion a different colour.
5. Place lollies and 100s and 1000s in separate bowls. Let kids spread cupcakes with icing and decorate with lollies.

Apple Pikletes



The kids will love these little apple pikelets. Pack some in their lunch-box or make them as a special Sunday morning breakfast treat.
 
Ingredients (makes 24)
1 1/2 cups self-raising flour, sifted
2 tablespoons caster sugar
1 egg, lightly beaten
300ml buttermilk
1/2 cup (140g) apple puree
20g butter, melted
 
Method
1. Combine flour and sugar in a bowl. Make a well in the centre. Whisk egg and buttermilk together in a jug. Add egg mixture to flour mixture. Whisk until smooth. Stir in puree.
2. Heat a large frying pan over medium heat. Brush base with butter. Using tablespoons of batter at a time, cook in batches for 2 to 3 minutes or until small bubbles start to form on the surface of pikelets. Carefully turn over. Cook for 1 to 2 minutes, or until cooked through. Transfer to a wire rack to cool. Store in an airtight container.
