Homemade Chocolate Popsicles

These homemade chocolate pops tastes just like chocolate Paddle Pops. You start with nice creamy chocolate custard and then freeze them into popsicle moulds to make great summer treats.

Ingredients

500mls milk

2 tbsp sugar

1 tbsp cocoa

1 tbsp cornflour

Method

1. Place the milk into a saucepan and bring to the boil. Whisk in the sugar, cocoa and cornflour. Stir constantly until the mixture is has thickened.

2. Pour into popsicles moulds and freeze.

Notes
• You can use reconstituted powdered milk in place of fresh milk for this recipe.
• This recipe makes 6 popsicles.

We came across this great and fun idea for ice painting on Kidspot. It's a good one to do on a hot summer’s day – it's cooling, fun and colourful. Definitely a job for old-clothing!

What you need

Ice cube tray

Water

Food colouring

A skewer

Paper

How to

1. Fill the ice cube tray with water.

2. Drop two drops of colouring into each cube, starting with the four main colours first.

3. Use the skewer to stir the colour into the water so it blends properly.

4. Start mixing colours to fill up the rest of the trays - use one drop of each colour (one red and one yellow for orange etc). The more colouring you put in, the more it will stain when the ice melts!

5. Freeze overnight.

6. Place ice into a bowl and let the kids paint! Keep another bowl of warm, soapy water and a towel nearby so the kids can clean (and warm!) their hands.

Ingredients (makes 24)
1 1/2 cups sushi rice
2 tablespoons rice wine vinegar
1 tablespoon caster sugar
4 nori sheets
2 tablespoons whole-egg mayonnaise
1 Lebanese cucumber, cut into matchsticks
1 medium avocado, thinly sliced
1 medium carrot, grated
Salt-reduced soy sauce, to serve

Method
1. Rinse and drain rice 3 times or until water runs clear. Place in a sieve over a bowl. Set aside for 10 minutes to drain.
2. Place rice and 1 1/2 cups cold water in a saucepan over medium heat. Cover. Bring to the boil. Reduce heat to low. Simmer, covered, for 12 minutes or until water has absorbed. Remove from heat. Stand, covered, for 10 minutes.
3. Meanwhile, place vinegar and sugar in a microwave-safe jug. Microwave on high (100%) for 30 seconds. Stir to dissolve sugar. Transfer rice to a large ceramic dish. Using a spatula, stir to break up lumps. Slowly add vinegar mixture, lifting and turning rice, until rice has cooled.
4. Place 1 nori sheet, shiny-side down, on a sushi mat. Using damp fingers, spread 3/4 cup rice over nori, leaving a 2cm strip at 1 short end. Spread 2 teaspoons mayonnaise over centre of rice. Arrange one-quarter cucumber, avocado and carrot over mayonnaise. Using the sushi mat, roll up firmly to form a roll. Cut into 6 slices. Repeat with remaining nori sheets, rice, mayonnaise, cucumber, avocado and carrot to make 24 pieces. Serve with soy sauce.

The classics

The top four boys' names chosen by Australian mums and dads in 2010 are all classic - Jack, William, Oliver and Thomas. These Aussie names have spanned generations and are back in favour once again this year. The same goes for the girls, with the top ten chart of female baby names including Emily, Sophie, Charlotte and Chloe. Even though there are other big naming trends this year, it seems we just can't go past the classics.

Numerals as names

Posh Spice has ignited the trend for using numerals as names, by calling her baby girl Harper Seven. While baby name experts say the number seven hails from football shirt worn by Harper's dad, David Beckham, he says their love of the number extends far beyond that. "The main reason behind Seven was it symbolises spiritual perfection – the seven wonders of the world, the seven colours of the rainbow – and in many cultures it is a lucky number," says David. It’s a name that’s set to multiply in popularity with parents around the world.

Nanna names

Old-fashioned names are another big baby naming trend. Jennifer Connelly called her baby Agnes and Christina Appelgate's bub has been saddled with Sadie! Hazel and Mabel are two other nanna names picked up by modern mums, along with Harry, Frank and Archie for baby boys.

Surnames as first names

Cooper. Jackson. Harrison. A big trend is using a surname as a first name. It comes down to the fact that strong surnames make ultra-masculine first names for boys - and sound even more powerful when matched with a strong surname. A sub genre of the trend is to replace the middle consonants with an 'x', so Jackson becomes Jaxxon.

Royal names

While ‘Pippa’ (or Philippa) hasn’t rated highly as a girls’ name in previous years, it’s rocketed up in baby name search engines following the Royal wedding in 2011. Combine that with the fact William is still the second most popular boys' name, and we predict that the Prince could throw Jack off his throne as the most popular boys' name following the April nuptials.

Country and city names

While Posh called her son Brooklyn after finding out she was expecting her son while in New York, singer Ashlee Simpson and Pete Wentz have continued the trend by calling their baby Bronx, after another NYC area. Gavin Rossdale and Gwen Stefani were on the island of Jamaica when they decided to use the capital city, Kingston, as their baby’s name. Alicia Keys has gone one step further and called her son Egypt!

Girl names with a V

Girl names with a V consonant make for a very strong sound that gives a certain sophistication and strength to a female name. New parents are steering away from wishy-washy long girls' names and leaning towards the easy-to-pronounce shorter monikers that have a bit of a punch to them. Expect to see Eva, Ivy, Olivia and Ava name tags on a kindergarten coat peg near you.

We came across this great tutorial on Kidspot. Make your own Bon Bons with the help of your little ones. You can fill the bon bons with whatever you like; little chocolates, tiny gifts or Christmas ornaments and for an extra surprise… add confetti!

You'll need

A bon bon kit (try craft stores like Spotlight or Lincraft)
Plain and coloured A4 paper
Small confetti (use a hole punch to punch out coloured paper to make your own)
Sticky tape
Double-sided sticky sheets cut into hearts or other shapes (available from Spotlight)
String
A joke written on a piece of small paper
Scalloped edge scissors

Method

1. Place the 'snapper' in the bon bon kit inside the cardboard roll
2. Roll up the roll inside the plain white paper. Secure with sticky tape.
3. Bunch up the paper at one end and tie with the string, being sure to include the snapper and the ends hanging out past the string.
4. From the open end, fill the roll with confetti, your rolled-up joke, gift, chocolate, etc. Bunch the paper up at this end with the snapper sticking out and tie with string.
5. Cut a strip of coloured paper with scalloped edge scissors, roll it around the bon bon and secure with tape.
6. Stick on your double-sided sticky heart or other shape on the front of the bon bon.
7. Sprinkle confetti over the sticky shape and gently pat into place. Place on plates and get ready to start your Christmas feast off with a bang!

Butternut Snap Rudolph Chocolate Tartlets

Ingredients (makes 20)
250g packet Arnott’s Butternut Snap Cookies
65g unsalted butter, chopped
1/3 cup cream
200g milk or dark chocolate, chopped
10 vanilla marshmallows, halved horizontally
2 tablespoons vanilla ready-made frosting
20 jaffas
20 mini vanilla marshmallows, halved crossways
Rich choc fudge writing icing
40 mini star pretzels

Method
1. Preheat oven to 180°C (160°C fan-forced). Place 1 biscuit over each hole of a 12-hole, 1 1/2 tablespoon-capacity round-based tartlet tin. Bake for 2-3 minutes or until soft. Remove from oven. Using a small ladle or a lime, carefully press softened biscuits into tin to mould into a cup shape. Allow to cool. Remove from tin and transfer to serving plate. Repeat with remaining biscuits.
2. Place butter, cream and chocolate in a saucepan over very low heat. Stir constantly for 7 minutes or until melted and smooth. Pour into a clean, dry bowl and refrigerate for 20 minutes or until cool but not set.
3. Fill biscuit cases with 1 heaped teaspoon of chocolate mixture. Place in refrigerator for 20-25 minutes, or until set.
4. Using the picture as a guide, gently press 1 marshmallow half, cut-side down into each tartlet. Attach 1 jaffa to each marshmallow with ready-made frosting to form a nose, then attach 2 mini marshmallow halves above nose, cut-side up, to form eyes. Use a drop of writing icing to form pupils. Cut pretzels in half to form antler shapes. Place 2 pretzel pieces above eyes. Press to secure. Serve.

Variation

After the chocolate tartlets have set, dust each with a little icing sugar mixture. Gently press 3 red mini M&Ms into tartlet to form berries. Gently press 1 spearmint leaf lolly into tartlet to form holly leaf. Serve.

6 pop top juices
6 ready-made jelly cups
6 party pies, warmed
6 mini sausage rolls, warmed
6 cocktail frankfurts, gently heated
6 bake-at-home rolls, baked and split
1/2 cup tomato sauce
6 iced doughnuts
6 boxes
6 spoons
6 serviettes

Method

1. Set out the boxes and place in the drinks, doughnuts and jelly.

2. Warm your pies and sausages rolls as per the packet instructions.

3. Warm cocktail frankfurts, taking care not to boil as they will split. Drain and place on rolls and spoon on tomato sauce. Place in box.

4. Place your pies and sausage rolls in the box. Serve with cutlery and serviettes.

Notes
- This is an 'occasional foods' box. If you are looking for a healthier alternative, you can swap the pies, sausage rolls and hot dogs with mini sandwiches and carrot sticks with a pot of dip.
- You could place little sachets of sauce in these boxes in case some children don't like sauce.
- It is much cheaper to make your own jellies rather than buy them but this is easy and fast if you don't have much time to prepare.
- You can make these boxes up at home and transport them to the park and just take the hot items in a foil-lined box and serve it when you get there.

Choosing a pet that suits the whole family requires some serious decision making. Big or small, furry or feathered, Narelle Muller for Homelife offers the following tips on how to pick the best pet for you.

The issue of whether or not to get a pet is guaranteed to come up at some point. Kids and pets, it seems, just go hand in hand. Whether you’ll get away with a simple, solitary goldfish, or end up conceding to a hatch full of guinea pigs depends on many factors. But whatever step you take, it’s a major life-changing decision.

Friends for life RSPCA spokesperson Kylie Maloney says: “It’s important to remember pet ownership is a full-time responsibility that takes time, money, patience and a lifelong commitment. The average life span of a dog or cat is 12 years, with some living until 15 or more. Your pet will need your love and care 365 days a year.”

Practical considerations of cost, time commitment, space, safety and compatibility arise, alongside emotional issues, such as how you’ll handle matters if the animal gets sick – or heaven forbid – dies. In some households, there are even custody battles to resolve along the way.

While you may have existing preferences on pet type, there’s still much to ponder before you actually bring one home. “It’s very important to consider whether a pet is suitable to your lifestyle and household,” says Maloney. Each species has certain characteristics, both physical and behavioural, but there are exceptions within breeds and these matters get even cloudier with mixed breeds. Even within types of dogs and cats there’s a wide spectrum of possibilities. You’ll need to go into pet adoption with the same mind-set you had when entering parenthood – determined to love this new addition to the family, no matter what.

Much has to do with training, and while some dog lovers will debate there’s no such thing as a bad dog, just bad owners, there are just as many who devoutly believe some breeds are more suited to young children than others. Be sure to do your homework beforehand. Popping down to the pet store on a whim could result in an emotional purchase you’ll live to regret. Sure, that baby rottweiler may be as cute as a button, but are you prepared for what lies ahead?

Canine or feline?

Buying from a reputable source will help ensure you get what you bargained for, especially if there are offi cial papers involved. You’ll have a better idea of how big your pet should grow, what type of physical characteristics they should have and a general overview of their nature.

Golden retrievers and labradors, for example, are widely viewed as the perfect companions for families with young children as they’regentle, playful, loyal and obedient. But, you must also bear in mind they are living beings, and like all things in nature, not everything fits the mould. Not every Jack Russell terrier will be frisky, and every cat can’t catch mice. One way to begin the pet adoption process is to make a list of the qualities you’re looking for. Chances are you already have a leaning for either a cat or a dog.

After that, consider size; behavioural perceptions; what you would like them to do; and the environment in which you and your pet will live. It’s no good falling in love with a fluffy lap-dog if you’re expecting it to sleep outside and guard the house. If loyalty and companionship is a major issue, a dog may be a better option than a cat, as cats generally tend to be more independent, coming and going as they please.

Think carefully, too, about what you can offer your pet. Taking on an animal that requires extensive exercise or grooming on a daily basis won’t work if you’re very busy. Most medium-to larger-sized pets really need a big yard to run around in, virtually ruling out apartment living. And if you’d rather be watching TV than walking your dog, you may want to consider a low-maintenance pet, such
as a fish.

Though it is a factor to consider if space is tight, pet size has very little bearing on suitability for children, as many larger dogs are more gentle and tolerant with youngsters than smaller breeds. Size is believed to be a major factor leading to the rise in the popularity of cats as the choice of pet for city dwellers and people with smaller living spaces. Add to this the fact that cats can often be trained to go to the toilet in a litter tray, but most dogs need to be walked in order to go about their daily business.

While advice is relatively easy to come by, it’s best to arm yourself with information from many sources, as you’ll often find vendors totally devoted to one breed of animal and their opinion may not be very objective. The lady on the end of the phone who is advertising pit bull terriers for sale won’t have a bad word to say about them and could be very persuasive, so be sure you research the breed’s traits, good and bad, before agreeing to anything.

Pet personalities Animal shelters are usually good for advice in general and have no vested interest in matching incompatible pets and owners. They will be sure to tell you if your choice isn’t a good one for children and also whether or not the animal has personality quirks you should be aware of. Most shelters put their animals through extensive behavioural tests and do necessary medical checks, vaccinations and de-sexing, which explains why you may be expected to hand over upwards of a couple of hundred dollars to “rescue” an abandoned pet.

Buying a pet

While there are always advertisements in local newspapers for animals, many pet owners will only buy through reputable breeders. Some animal lovers feel pet shops are too commercial and don’t place the animals’ welfare as top priority. Shop owners, however, refute such claims, saying most go into their line of business for the love of animals.

The first thing you should do is find out about the breed of animal you’re buying beforehand, so you can ask about possible deformities and health issues. For example, some dogs are prone to hip dislocation that can eventually lead to them being put down. At the very least, it’s wise to choose an animal that has been vet checked, vaccinated and wormed.

For every type of pet, there’s an organisation of passionate owners willing to offer advice and support. Informal Internet groups and official bodies, such as the Australian National Kennel Council, can offer background and possibly direct you to a group of local enthusiasts in your area.

Christmas Chocolate Spoons

Ingredients

200g white chocolate
200g milk chocolate
Cachous
Coated chocolate chips
Plastic spoons
Ziploc bags
Christmas style ribbon

Method
1. Lay spoons out on a tray covered with baking paper. Prop the end of the spoons up so they are level.

2. In a glass bowl, heat the white chocolate for 30 second increments in the microwave, stirring constantly until it is melted and smooth. Pour into a ziploc bag. Repeat with the milk chocolate.

3. Snip a small corner of the bag and fill half of the spoons with white chocolate and half with the milk chocolate. Tap each spoon so the chocolate is a level spoonful.

4. Pour the remainder of each chocolate into fresh ziploc bags. Snip a very small corner off and pipe your chosen designs on the spoons.

5. Add the cachous and coated chocolate chips. Tie ribbons around the spoons. Place spoons in the refrigerator to set.

What you will need

For the board
30 x 30 cm piece of felt - the edges finished with pinking shears;
Sewing machine;
Contrasting coloured sewing thread;
Two colours of clay;

Skewer;

For the bag
2 pieces of calico - 20x15cm rectangles;
Sewing pins;
Iron;
A 50cm length of string;
Iron-on motif (we used an iron-on cross)

How to
1. Zigzag stitch a grid on the felt to make the board.

2. To make the game pieces, create six small balls out of each colour of the clay, then flatten slightly with your thumb or the back of a teaspoon. Use a skewer to mark the pieces with noughts or crosses. Allow to dry completely.
3. To make the bag, pin together the rectangles of calico, then stitch around three sides (two long sides and one shorter side). Pin and press a hem along the unfinished opening, then stitch in place, leaving an opening for the drawstring.
4. Press the seams, then turn right side out.
5. Add an iron-on motif if desired.
6. Thread string through the casing and tie.

Ingredients (makes 3 large)
120g unsalted butter, softened
60g caster sugar
120g plain flour
60g rice flour (see note)
1 eggwhite, very lightly beaten
1/2 cup 100s and 1000s

Method
1. Preheat the oven to 180°C.
2. Place the ingredients in a food processor and blend until just combined. Turn out onto a well-floured work surface and bring together with your hands until you have a rough ball of dough. Use a floured rolling pin to roll out the dough to about 1/2 cm thick. Use a decorative or festive cookie cutter* to cut shapes from the dough, then place on a greased baking tray and bake in the oven for 20-25 minutes. Remove from oven, brush with eggwhite and sprinkle with 100s and 1000s. Return to the oven for a further minute.
3. Allow to cool completely before packing in tissue-lined boxes.

1 cup chopped fresh mango
1 1/2 cups frozen raspberries
3/4 cup vanilla yoghurt

Method
1. Process chopped fresh mango in a food processor and transfer to a bowl.

2. Puree 1 1/2 cups frozen raspberries in the same way. Add 3/4 cup yoghurt to each bowl and mix to combine.

Kids will go 'flat out' making these fantastic quick and choc pancake sundaes.

Ingredients (makes 8)
1 cup plain flour
2 teaspoons caster sugar
1 cup milk
2 eggs
1 tablespoon cocoa powder (see tip)
Olive oil cooking spray
8 small scoops reduced-fat vanilla ice-cream
1/3 cup chocolate topping
1/2 cup mini marshmallows

Method
1. Process flour, sugar, milk, eggs and cocoa until smooth. Transfer to a jug. Cover. Set aside for 20 minutes.
2. Spray an 18cm (base) non-stick frying pan with oil. Heat over medium heat. Pour 1/4 cup batter into pan. Swirl to cover base. Cook for 2 minutes or until light golden. Turn. Cook for 30 seconds. Transfer to a plate. Cover to keep warm. Repeat to make 8 pancakes.
3. Serve pancakes with ice-cream, topping and marshmallows.

Notes
• To freeze: Layer cooled pancakes between baking paper. Place in a snap-lock bag or airtight container. Freeze for up to 3 months.

• To thaw: Thaw at room temperature overnight.

• Tip: You could use Milo or drinking chocolate instead of cocoa powder.

Choosing a baby name is one of the biggest decisions you'll ever have to make. It's even bigger than choosing your wedding dress, first home, or any home for that matter, because your child will carry it throughout her entire life. So Kidspot have given some great tips on choosing the right name for your newborn.

Will it last?

Make sure the name you give your child will last a lifetime. It should not only suit when they are a baby, but a child, teenager, adult and a grandparent.

Edgy or conventional?

Decide if you want a different, edgy, unusual name or a traditional, old-fashioned one. Think about if you'd prefer a popular name that will “fit in” with your child's peers, or if you're happy for him/her stand out in the crowd? While the first name is by far the most important, you'll also need to discuss with your partner what surname you're going to use and if it goes well with the first name you choose.

Spelling

Think carefully before choosing an unusual spelling or pronunciation for your child's name. While a different spelling can make your child's name stand out, it may also mean a lifetime of spelling it out. Also consider your friends and family. Do you have close family members or friends who have children with certain names and does it matter if your child has the same name?

How does it sound?

When you choose your baby's first name, try it out with the chosen surname and middle name to see how it rolls off the tongue. If there's too much alliteration going on, or is difficult to pronounce, you may need to rethink one of the names. Think about what rhyming words can be easily strung with the name to avoid schoolyard name calling. Likewise, make sure it doesn't sound similar to another word that you don't want associated with your child.

You like Tom, he likes Tim

Some couples find it really difficult to choose a name that they both agree on. This is a tricky one and in the end you'll both have to compromise. Try this strategy: Each make a long a list of names you both can live with - then swap lists and choose a name from the other's list and go from there.

The middle name dilemma

Remember to put the initials together to make sure your child's name doesn't spell something you don't want like DUM, or TIT. Middle names can be anything you fancy, but many parents-to-be like them to have some sort of meaning. It's common for parents to give their child their first name as a middle name. Many mums and dads also opt to pay homage to a parent, or in law, or special person by giving their child that special person's name as a middle name.

Give it time

Do your best to choose a lovely name that will last a lifetime for your child, but rest assured that whatever baby name you choose, within a few days it will suit him/her completely.

We came across this colourful layer cake on Whisk Kid. It's the ideal cake for a child's birthday party.

Ingredients

Vegetable shortening
3 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
2 sticks (1 cup) unsalted butter, room temperature
2 1/3 cups sugar
5 large egg whites, room temperature
2 teaspoons pure vanilla extract
1 1/2 cups milk, room temperature
Red, orange, yellow, green, blue, and purple gel food coloring
Lemony Swiss Meringue Buttercream

Method

1. Preheat oven to 350 degrees. Brush six 9-inch-round cake pans (or as many 9-inch cake pans as you have, reusing them as necessary) with shortening. Line bottom of each cake pan with parchment paper; brush again and set aside.

2. In a large bowl, whisk together flour, baking powder and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar. Slowly add egg whites and mix until well combined. Add vanilla and mix until fully incorporated. Add flour mixture and milk in two alternating additions, beginning with the flour and ending with the milk. Mix until well combined.

3. Divide batter evenly between six medium bowls. Add enough of each color of food coloring to each bowl, whisking, until desired shade is reached. Transfer each color to an individual cake pan. Transfer to oven and bake until a cake tester inserted into the center of each cake comes out clean, about 15 minutes (working in batches if necessary).

4. Remove cakes from oven and transfer to a wire rack; let cool for 10 minutes. Invert cakes onto a wire rack; re-invert and let cool completely.

5. Using a serrated knife, trim tops of cakes to make level. Place four strips of parchment paper around perimeter of a serving plate or lazy Susan. Place the purple layer on the cake plate. Spread a scant 1 cup buttercream filling over the first layer with a small offset spatula so it extends just beyond edges. Repeat process with blue, green, yellow, and orange layers.

6. Place the remaining red layer on top, bottom-side up. Gently sweep away any loose crumbs with a pastry brush. Using an offset spatula, cover the top and sides with a thin layer of frosting (also use any of the excess frosting visible between the layers). Refrigerate until set, about 30 minutes.

7. Using an offset spatula, cover cake again with remaining frosting.

DIY Felt Bow Headbands

Create this gorgeous Felt Bow Headband with this easy tutorial from Trey & Lucy.

What you will need:

Felt

Elastic or stretch lace
Hot glue gun

Method:

1. Cut 2 strips of felt 19 inches x 1 1/2 inches and 3 1/2 by 1 1/2 inches.
2. Find and mark the middle. Fold one side to the middle and then fold the extra back over to the other side.

3. Do the same thing with the other side making sure the initial folds are at least even.

4. With the hot glue gun place some glue in the center to hold those folds down.

5. Take the small strip of felt and glue it to the back of the folded piece.

6. Tightly bring it around to the front of the bow then around the back and glue it secure.

7. Cut a triangle shape out of the ends of your.

8. Measure a piece of elastic about an inch or so smaller than your babies head. Put some hot glue on one end. Glue the ends together.
9. Cover the back of the entire bow with the hot glue and glue your headband to your stretch lace.

Witch's Hat Cookies

Ingredients (makes 12)
2/3 cup plain flour
1/4 cup firmly packed brown sugar
2 tablespoons cocoa powder
60g butter, chopped
1 egg yolk
375g packet milk chocolate melts, melted
12 mini ice-cream cones
1/3 cup M&Ms minis

Method
1. Process flour, sugar, cocoa and butter until mixture resembles fine breadcrumbs. Add egg yolk. Process until dough just comes together, adding 2 teaspoons of cold water if necessary. Turn pastry onto a lightly floured surface. Knead until just smooth. Shape into a disc. Cover with plastic wrap. Refrigerate for 30 minutes.
2. Preheat oven to 180°C/160°C fan-forced. Line 2 baking trays with baking paper. Roll out pastry between 2 sheets of baking paper until 5mm thick. Using a 5.5cm cutter, cut 12 rounds from dough. Place rounds, 3cm apart, on prepared trays. Refrigerate for 10 minutes.
3. Bake for 10 to 12 minutes or until light golden. Cool on trays for 5 minutes. Transfer to a wire rack to cool completely.
4. Line a tray with baking paper. Using a small pastry brush, spread a little melted chocolate onto the top of 1 biscuit. Working quickly, dip the outside of 1 cone into chocolate, turning to coat all over. Stick the cone onto the biscuit. Place onto prepared tray. Working quickly, decorate cone with M&Ms. Repeat with remaining biscuits, melted chocolate, ice-cream cones and M&Ms. Refrigerate for 20 minutes or until set. Tie ribbon around base of each hat. Serve.

Chocolate Crackle Spiders

Ingredients (makes 12)
70g (2 cups) Rice Bubbles
120g (2/3 cup) icing sugar mixture
35g (1/2 cup) shredded coconut
1 tbs cocoa powder, sifted
140g copha
20g (1/4 cup) shredded coconut, extra
1 tbs icing sugar mixture, extra
1 tsp cocoa powder, extra
24 red jelly beans
190g (1 cup) dark chocolate melts (Nestle brand)

Method
1. Combine the Rice Bubbles, icing sugar, coconut and cocoa in a large bowl. Place the copha in a small saucepan and stir over medium heat for 3 minutes or it melts. Reserve 2 tablespoonfuls of copha. Add the remaining copha to the Rice Bubbles mixture and stir until well combined.
2. Combine extra coconut, extra icing sugar and extra cocoa with reserved copha in a small bowl.
3. Place 2 tablespoonsful of Rice Bubbles mixture in each hole of a 12-hole (80ml/1/3-cup) muffin pan. Use a teaspoon to lightly press down. Sprinkle with coconut mixture. Press red jelly beans in each chocolate crackle for eyes. Place in the fridge for 30 minutes to set.
4. Meanwhile, line 2 baking trays with non-stick baking paper. Place the chocolate melts in a medium heatproof bowl over a saucepan of simmering water, stirring occasionally, until it melts and is smooth. Reserve 2 tablespoonfuls of chocolate. Place the remaining chocolate in a small plastic bag. Use a pair of scissors to snip the corner and pipe 8 chocolate lines, about 10cm long, onto the lined tray to make spider legs. Repeat to create 11 more sets of legs. Place in the fridge for 5 minutes or until set.

5. Remove chocolate crackles from pan and place, coconut-side up, on a clean work surface. Use reserved melted chocolate to attach the chocolate legs to each spider. Serve.

Notes
• Microwave tip 1: Chop the copha and place in a heatproof microwave-safe bowl. Heat, uncovered, on High/800watts/100% for 3-4 minutes or until almost melted.
• Microwave tip 2: Place chocolate melts in a heatproof microwave-safe bowl. Heat, uncovered, on High/800watts/100%, in 1 minute bursts, stirring every minute with a metal spoon until almost melted. Stand for 1 minute and stir well.
• You can prepare these spiders to the end of step 3 up to 1 day ahead. Continue from step 4 up to 6 hours ahead.

Halloween Biscuits

Ingredients (makes 28)
3 cups pure icing sugar
1/4 cup hot water
20g butter
2 to 3 drops orange food colouring
250g packet plain biscuits (see note)
melted chocolate
sweets, drinking chocolate and coloured sprinkles, to decorate

Method
1. Sift icing sugar into a large bowl. Place water and butter into a jug and stir until butter melts. Pour butter mixture into icing sugar, stirring to combine.
2. Add food colouring to icing sugar mixture, 1 drop at a time, stirring constantly, until you have the desired colour.
3. Using a butter knife, spread melted chocolate or icing over biscuits.
4. Decorate biscuits with leftover melted chocolate, sweets, drinking chocolate and coloured sprinkles.

They are due home from school in and hour and you just know that they will be hungry. This simple pikelet recipe from Kids Spot is an easy, healthy after school snack that will fill their tummies and bridge the gap between home time and dinner time.

Ingredients

Gluten-free (see note below), nut-free
2 cups self-raising flour
¼ teaspoon salt (optional)
1/3 cup caster sugar
1 egg
1 cup (250mL) milk
1 tablespoon butter

Method
1. Sift flour and salt, add sugar, drop unbeaten egg into the middle of the bowl and stir.

2. Slowly add enough milk to make a thick batter. Beat well until smooth.

3. Heat a non-stick pan over a medium heat, melt ½ teaspoon butter and drop heaped tablespoonfuls of mixture into the pan.

4. I cooked about 5 at a time. When bubbles appear on the surface, turn the pikelets (muttering and cursing and chasing them all over the pan) and allow to brown on the second side.

5. Transfer pikelets onto a plate and cover with a cloth while you finish cooking the remainder.

Notes

• Easy to pack in lunchboxes because you don’t need to do anything else to them. Handy for afternoon tea, too.
• I also make these for breakfast (on those infrequent ‘perfect’ mornings) as a change to regulation weet-bix or toast.
• It can be a bit tricky getting the temperature right, I prefer to cook at a lower heat and potter round the kitchen doing other things while they cook slowly.

Ingredients

100g milk chocolate, melted
1 bag Milky Way bars (you will need 24)
1 box Tiny Teddy biscuits, honey flavour
1 bag Smarties (340g)

Method
1. Set out a tray or serving plate for the Teddies.

2. Sort the Smarties into colours and cut 12 Smarties in half with a sharp knife to use for steering wheels (keep in mind steering wheel colours need to match with wheel colours).

3. Remove the wrappers from the Milky Way bars.

4. Cut 24 Tiny Teddies in half at the belly button using a sharp knife.

5. Place the melted chocolate into a resealable bag and snip a tiny corner off. Squeeze out a few drops of chocolate to glue 4 Smarties 'wheels' on each car then place on the serving tray.

6. Place a few drops of chocolate on the top of each 'car' and sit the Teddy's on. Place a drop of chocolate on the 'car' in the front of each Teddy and glue on steering wheels.

Ingredients

3 cups plain flour
3 cups rolled oats
2 1/4 cups brown sugar
1 1/2 tsp baking powder
1/2 tsp salt
375g (1 1/2 cups) butter, melted
600g Nutella or hazelnut spread

Method
1. Preheat oven to 180°C. Line a 23 x 33cm baking pan with baking paper and set aside.

2. In a bowl, place the flour, baking powder, salt, oats and brown sugar. Stir together.

3. Pour in the melted butter and stir to combine.

4. Set aside 2 cups of mixture and press the remainder into the bottom of the pan.

5. Heat Nutella in the microwave for 1 minute and pour over the base.

6. Sprinkle the reserved oat mixture over the Nutella.

7. Bake for 25 minutes or until golden. Leave to cool and slice into squares or bars.

Tortilla Pizza Margherita Recipe

Ingredients

1 wheat tortilla wrap
2½ tablespoons tomato sauce (home-made or shop bought)
30g cheddar or mozzarella, grated
2-3 black stoned olives, cut into rings
1 cherry tomato, cut into rings
2 cubes drained canned pineapple, cut into dice
1 tablespoon diced red capsicum
1 tablespoon drained canned corn
1 green onion, sliced
2 mushrooms, sliced
3-4 very thin slices zucchini, brushed with a little oil
1 tablespoon freshly grated parmesan
2 sundried tomatoes, finely sliced

Method
1. Preheat the oven to 200°C.
2. Put the tortilla wrap on a baking sheet and spread over the tomato sauce. Sprinkle over the cheese and add any desired toppings – keep it to two or else it will turn into a mess.
3. Bake for 8-9 minutes, until the cheese has melted and the base is crisp.
4. Cut into triangles and allow to cool slightly before serving.

Focaccia Pizza

Ingredients

9cm focaccia square, split in half

50g cheddar or mozzarella, grated
2-3 toppings of your choice (see below)

Suggested toppings

Drained sweetcorn
Diced chorizo, salami or pepperoni
Mushrooms, sliced and cooked in olive oil
Zucchini, thinly sliced
Shaved ham, cut into strips
Pineapple rings, diced
Red or yellow capsicum, diced
Spring onion, thinly sliced
Tomato, sliced or cut into wedges
Olives, pitted and thinly sliced
Cooked chicken, diced
Bacon, cooked and crumbled

Sauce

1 teaspoon olive oil
½ red onion, chopped
1½ tablespoons tomato paste
1 tablespoon water

Method
1. Preheat the grill to high. To make the sauce, heat the oil in a small frying pan and cook the onion for 5 minutes, until soft. Remove from the heat and stir in the tomato paste and water.
2. Put the focaccia halves on an oven tray lined with baking paper, cut-side up. Spread over the sauce and then sprinkle with your choice of toppings. Scatter cheese over the top.
3. Grill the pizzas for 4 minutes, until the cheese is bubbling and golden. Allow to cool slightly before serving.

Little Pita Pizza's

Ingredients

1 small red onion

1 tablespoon olive oil
1 small clove garlic, crushed
1 tablespoon tomato puree
2 teaspoons tomato sauce
1 tablespoon hot water
2 small round pita breads
50g cheddar cheese, grated

Method
1. To make the tomato base, chop and fry the onion in the oil for 5 minutes. Add the garlic and cook for 1 minute. Stir in the tomato puree and sauce, and water.
2. Split the pitas in half and toast lightly until crisp. Divide the tomato base between the pitas and spread out right to the edges.
3. Scatter cheese over the tomato base. Use topping ingredients to make patterns or faces. Grill until cheese melts.

Yakitori Chicken Kebabs With Noodles

Introduce your kids to the tastes of Japanese food with this delicious chicken skewers and noodle recipe.

Ingredients

3 tablespoons mirin
3 tablespoons honey
3 tablespoons soy sauce
2 teaspoons rice wine vinegar
1 teaspoon grated fresh ginger
1 clove garlic, crushed
2 tablespoons oil
4 chicken thighs, boned and cut into large chunks
6 bamboo skewers, soaked in water for 20 minutes
125g medium noodles
1 large zuchinni, sliced into batons
1 large carrot, sliced into batons
2 spring onions, thinly sliced
1 red onion, sliced
75g chestnut mushrooms, sliced
75 ml chicken stock
4 teaspoons soy sauce
4 teaspoons sweet chilli sauce

Method
1. Combine the mirin, honey, soy sauce, vinegar, ginger and garlic in a small pan. Bring to the boil and cook, stirring, until reduced by a third. Cool completely.

2. Mix the cooled marinade with the chicken and place in the fridge for 30 minutes.

3. Preheat the oven to 220°C. Thread chicken onto skewers. Heat 2 tablespoons of oil in a frying pan. Brown the skewers for 1-2 minutes on both sides until golden, then place on a baking tray. Bake in the oven for 12-15 minutes until cooked through.

4. Meanwhile, cook noodles in boiling water according to packet instructions and drain.
5. Heat remaining oil in a frying pan or wok. Fry all the vegies for 3-4 minutes, then add noodles, stock, soy and chilli sauce, and heat through. Serve with the kebabs.

Method
1. Preheat oven to 180°C/160°C fan-forced. Line a 12-hole, 1/3 cup-capacity muffin pan with paper cases.
2. Using an electric mixer, beat butter, vanilla and sugar until light and fluffy. Add eggs, 1 at a time, beating after each addition. Stir in flour and milk to combine.
3. Spoon 1/4 cup mixture into each paper case. Bake for 25 minutes or until a skewer inserted in the centre of 1 cake comes out clean. Stand cakes in pan for 2 minutes. Transfer to a wire rack to cool.
4. Make icing: Using an electric mixer, beat butter in a bowl until pale. Gradually add icing sugar mixture and milk, beating to combine. Divide icing between 3 bowls. Tint each portion a different colour.
5. Place lollies and 100s and 1000s in separate bowls. Let kids spread cupcakes with icing and decorate with lollies.

2. Heat a large frying pan over medium heat. Brush base with butter. Using tablespoons of batter at a time, cook in batches for 2 to 3 minutes or until small bubbles start to form on the surface of pikelets. Carefully turn over. Cook for 1 to 2 minutes, or until cooked through. Transfer to a wire rack to cool. Store in an airtight container.

Ingredients
Melted butter, to grease
150g butter, at room temperature
1/3 cup caster sugar
1 tsp vanilla essence
1 egg
1 cup plain flour
1/4 cup self-raising flour
2 tbsp milk
395g can sweetened condensed milk
1/2 cup fresh lemon juice
1/4 cup passionfruit pulp

Method
1. Preheat oven to 180C. Brush a 16 x 26cm (base measurement) slab pan with melted butter to grease. Line the base and two long sides with non-stick baking paper, allowing the sides to overhang.

2. Using an electric beater, beat the butter, sugar and vanilla in a bowl until pale and creamy. Beat in the egg. Fold in the combined flours and milk until smooth.

3. Spoon the mixture into the prepared pan. Use the back of a metal spoon to spread and press evenly over the base of the pan. Bake for 15 minutes or until a skewer inserted into the centre comes out clean.

4. Meanwhile, use a balloon whisk to whisk the condensed milk, lemon juice and passionfruit in a large jug until smooth and well combined. Pour the condensed milk mixture over the base.

5. Bake for 15 minutes or until firm to the touch. Set aside to cool completely. Cut into slices to serve.

Notes
This slice is best served at room temperature – for a soft texture, take it out of the fridge one or two hours before serving. If it's too cool, the texture will seem dry and hard.

2 eggs
185ml (3/4 cup) milk
90g (1/3 cup) thick natural yoghurt
2 tbs pumpkin kernels (pepitas)

Method
1. Preheat oven to 180°C. Spray six 185ml (3/4-cup) muffin pans with oil.
2. Combine the flour and baking powder in a large bowl. Stir in the pumpkin, corn, prosciutto or ham, cheddar and shallot. Make a well in the centre.
3. Whisk the eggs, milk and yoghurt in a jug. Pour into the well in the flour mixture and stir until just combined. Spoon among the prepared pans. Sprinkle with pumpkin kernels.
4. Bake for 25-30 minutes or until a skewer inserted into the centres comes out clean. Set aside in pans for 5 minutes to cool before transferring to a wire rack to cool completely.

Not sure what to cook the kids for dinner? This recipe has just the right amount of crunch and the lamb cutlets are a perfect fit for small hands.

Preparation Time 20 minutes
Cooking Time 50 minutes

Ingredients (serves 4)
6 small sweet potatoes (kumara), unpeeled, scrubbed, cut into wedges
80ml (1/3 cup) olive oil
75g (1/2 cup) plain flour
2 eggs
2 tsp water
50g (1 cup) panko breadcrumbs
1 tbs dried Italian herbs
8 lamb cutlets, French trimmed
220g tub spreadable cream cheese
60ml (1/4 cup) sweet chilli sauce
2 tbs tomato sauce

Method
1. Preheat oven to 200°C. Line 2 large baking trays with non-stick baking paper. Place the sweet potato, skin-side down, on 1 tray. drizzle over 2 tablespoons of oil. Season with salt and pepper. Roast for 40 minutes or until golden. Turn oven off. Cover the sweet potato with foil and leave in oven to keep warm.
2. Meanwhile, place flour in a shallow bowl. season with salt and pepper. Whisk egg and water in a separate shallow bowl. Combine breadcrumbs and herbs in another bowl. Coat 1 lamb cutlet in the flour and shake off excess. Dip in egg, then in the breadcrumb mixture, pressing firmly to coat. place on remaining tray. Repeat with remaining lamb, flour, egg and breadcrumb mixture. Cover and place in the fridge for 30 minutes to chill.
3. Combine the cream cheese, sweet chilli sauce and tomato sauce in a bowl.
4. Heat remaining oil in a large non-stick frying pan over medium-high heat. Cook half the lamb for 4 minutes each side or until golden. Transfer to a plate lined with paper towel. Repeat with the remaining lamb. Serve with the chips and dip.

Notes

Make it ahead: Crumb the cutlets, then freeze in an airtight container for up to 2 months.
